Since 1842, when Moët & Chandon created the Grand Vintage cuvée, this great champagne has been made for the pleasure of connoisseurs looking for more mature wines. Since then, each Grand Vintage is unique, a free and personal interpretation of the year by Moët & Chandon’s Chef de Cave. After several vintages dominated by Chardonnay, the controlled power of Pinot Noir is in the spotlight in 2012. The last vintage with such a proportion dates from 1996. “This wine evokes the transition from spring to summer. It offers a certain sweetness, accompanied by freshness and serenity for the white, and delicacy and coral shades for the rosé.” – Moët & Chandon cellar master.
    To the eye

The colour is pale yellow, brilliant, with beautiful green reflections. The bubbles are fine and persistent.

    On the nose

The initial sweet hints, such as harvest, calisson or vanilla, gradually open out into a browner, toasted register, with notes of roasted sesame, grilled almond or mocha. Alongside it, the fruit, fleshy and juicy, evokes the warm atmosphere of a peach and apricot orchard in the heart of summer. The floral evocation of an armful of roses and peonies completes a blooming and delicate ensemble.

    In the mouth

The first contact is ample and smooth. Then the texture unfolds, silky and fluid; the controlled power of the Pinot Noir, with notes of honey and sweet spices, is underlined by a nuance of pink grapefruit. The wine is mature, generous and smooth at the same time.

    Ideal operating temperature

To appreciate all its finesse and aromas, champagne should be enjoyed chilled (but not iced). Depending on the cuvée, the ideal serving temperature is between 8 and 12°C.

    Potential of keeping

Like all wines, champagne can be kept for varying lengths of time, depending on the type. Under optimal storage conditions, champagne can be kept for 1 to 2 years for Brut cuvées, and up to 4/5 years or even longer for vintage and prestige champagnes. Whatever happens, rest assured that you'll never be able to open your champagne too early, as the Champagne Houses only release their cuvées when they have reached perfect ripeness and are ready for immediate consumption.
