The Cuvée Spéciale millésime 2013, a reference of the Nicolas Feuillatte style, celebrates finesse and lightness. A chiselled structure, a fresh and pure fruit combine to form a nuanced champagne where the greediness of the Chardonnays is perfectly combined with the structure of the Pinots Noirs.

This champagne can be enjoyed on all occasions, as an aperitif or at the table. We particularly like its notes of white fruit, sweet spices and lime blossom, its freshness and its length in the mouth; it can be enjoyed with light and tasty dishes.

Simple pleasure: Italian pasta salad, Speck Involtini with goat's cheese and tarragon or Pear tart.
Relaxing moment: Salmon with Champagne sauce and steamed vegetables, Turkey fricassee with fresh Chaource apricots or Pear and Mirabelle sorbet with basil leaves.

Blend : An harmonious champagne made of 40% Chardonnay for elegance and finesse, 40% Pinot Noir for roundness and structure and 20% Pinot Meunier for fruitiness and suppleness. 60 crus, including a large proportion of Premiers Crus, are used in the production of this Cuvée Spéciale.
Vinification : Aged in the cellar for 3 years. The Cellar Master's approach is to adapt the dosage level to each cuvée in order to sublimate its flavours and aromas. The choice of reserve wine is essential. It is chosen according to the vintage, the year of harvest, the grape variety, the method of vinification and ageing to guarantee the unique style of each cuvée.
