    Tasting Notes

    An exaltation of the senses! The robe is brilliant, with some golden reflections. The bubble is shimmering and very fine.

    Initial notes of white flowers such as jasmine, honeysuckle and vine flowers are felt on the nose before opening up to fruitier nuances of apple, pear and peach. Some fresh almond and frangipani notes complete the bouquet.

    On the palate, the wine reveals more complex aromas of dried apricot, hazelnut, honey and candy sugar. The silky textures give the wine its personality, elegance and character. Maturation has allowed the wine to acquire depth and power.

    Food pairings

    There is a lot of flesh and substance. The texture is crisp and silky. The minerality of the chalk resonates brilliantly with this fleshy structure and contributes to the length. The finish is fresh and generous, suggesting a discreet dosage followed by a long period of post-disgorgement rest that does not disturb the natural balance of the wine.

    Ideal serving temperature : Serve between 10 and 12 °C.

    Blend : The blend of La Grande Dame 2012 is mainly composed of grapes from the historic Grands Crus vineyards, among the most prestigious in Champagne. Pinot Noir predominates at 90% in the blend, magnified by 10% Chardonnay, with grapes from Aÿ, Verzenay, Verzy, Ambonnay, Bouzy. The 10% Chardonnay comes from the Grands Crus vineyards of Avize and Mesnil-sur-Oger.

It is a perfect expression of the House's love for Pinot Noir which, since the 2008 vintage, represents more than 90% of the blend. It is the Cellar Master's responsibility to glorify this grape and to find the right balance allowing it to express its refined, elegant, light, delicate, yet powerful character, with great firmness, incredible subtlety and a certain reserve. It is a tribute to Madame Clicquot and the creative and elegant souls who followed in her footsteps. A wine reflecting the image of La Grande Dame. It was with determination, intuition and vision that Madame Clicquot selected and acquired exceptional plots of land in the villages of Bouzy, Verzenay and Verzy, which would later obtain the prestigious Grand Cru appellation. Two fascinating women, two parallel destinies: This is not the first meeting between the two women: in 2006, on the occasion of an auction in Tokyo, Yayoi Kusama had already given new life to the portrait of Madame Clicquot by playing with her famous peas.
