Hugo & Victor‘s pastry chef, Hugues Pouget, has once again partnered with the Barons de Rothschild Champagne House to create a Christmas Wreath in perfect harmony with the Barons de Rothschild Blanc de Blancs cuvée. This dessert will charm gourmets with a combination of Yuzu crumble, Genoa bread biscuit, Konatsu lemon confit and cream, and fresh sage-infused bavaroise.

The Chef’s words: “I worked this recipe like a dessert on the plate, perfectly matching the Blanc de Blancs Champagne Barons de Rothschild. The citrus and herbaceous notes of this champagne led me to this refreshing and vegetal pairing of lemon and sage“.
