With Ayala Collection N°16 Blanc de Blancs 2016, the house reveals its savoir-faire around Champagne’s white grape varieties and its expertise in highlighting the diversity of its crus. An exceptional Blanc de Blancs, Cuvée N°16 is blended from Chardonnay, Arbane, Petit Meslier and Pinot Blanc grapes sourced exclusively from the Grands Crus and Premiers Crus of the Côte des Blancs and Montagne de Reims. A confidential cuvée that celebrates the diversity of white grape varieties and the great terroirs of Champagne.

    Recommended glass shape: a tulip-shaped, spherical glass with a narrower opening to enhance taste and aroma.

    The 2028 harvest: a rainy winter and mild spring, and a dry, sunny summer herald optimal conditions for an early harvest. The latter is generous and in a state of near-perfect health, particularly for the Chardonnays. The Grands Terroirs have come into their own, thanks to the freshness of Champagne’s chalky subsoils.
    To the eye

    A brilliant robe with silvery highlights.

    On the nose

    The subtle, complex nose reveals a multiple expression of fruit: mirabelle plum, candied lemon zest and white grapefruit. Notes of white flowers, acacia honey and fresh hazelnut.

    In the mouth

    The attack is clean and tangy, with notes of apricot, yuzu, white flowers and eucalyptus. Silky, elegant and fresh on the palate. A chiseled, complex wine with a long, saline finish.

    Food & champagne pairings

    This champagne is the perfect accompaniment to scallop ceviche with Granny Smith apple and a hint of basil oil, salmon gravlax with lemon thyme, lemon tart with almond shortbread or poached apricot with verbena.

    Potential of keeping

    Like all wines, champagne can be kept for varying lengths of time, depending on the type. Under optimal storage conditions, champagne can be kept for 1 to 2 years for Brut cuvées, and up to 4/5 years or even longer for vintage and prestige champagnes. Whatever happens, rest assured that you'll never be able to open your champagne too early, as the Champagne Houses only release their cuvées when they have reached perfect ripeness and are ready for immediate consumption.

    Blend of 4 white grape varieties: 50% Chardonnay, 50% Arbane, Petit Meslier, Pinot Blanc. 100% Grands Crus and Premiers Crus Chardonnays from the Côte des Blancs and Montagne de Reims: Aÿ, Avenay, Chouilly, Cramant, Cuis, Oger.
    Vinification :
    Micro-vinification by plot in small stainless steel vats.

    6 years of ageing between harvest and sale.
