Maison Ayala reveals A/18, signature purity. Cuvée Ayala Blanc de Blancs A/18 magnum is a unique interpretation of the House’s signature Blanc de Blancs. This new blend of 100% Grands Crus and Premiers Crus Chardonnays expresses the purity of the chalky soils of the Côte des Blancs and Montagne de Reims around the singularity of the 2018 harvest. Entirely Vintage, this first edition of A/18 will be followed by new interpretations that will continue to explore the various Terroirs of Chardonnays, selected by Champagne Ayala at each harvest, allowing the cuvée to reinvent itself with each new edition.

    The 2028 harvest: a rainy winter and mild spring, and a dry, sunny summer herald optimal conditions for an early harvest. The latter is generous and in a state of near-perfect health, particularly for the Chardonnays. The Grands Terroirs have come into their own, thanks to the freshness of Champagne’s chalky subsoils.

    On the nose

    The nose reveals elegant aromas of pear, grapefruit and jasmine, accompanied by hints of honey.

    In the mouth

    The clean attack is followed by notes of blood orange and pastry. A very lively wine, with fine bitters and the chalky minerality characteristic of this emblematic Ayala cuvée.

    Food & champagne pairings

    This champagne is a perfect match for refined cuisine, revealing the raw material without artifice, to echo the great purity of the wine. Its liveliness makes it a perfect aperitif champagne, and will go particularly well with starters or fish dishes such as scallop carpaccio, sea bass tartar with citrus fruit or oysters.

    Potential of keeping

    Like all wines, champagne can be kept for varying lengths of time, depending on the type. Under optimal storage conditions, champagne can be kept for 1 to 2 years for Brut cuvées, and up to 4/5 years or even longer for vintage and prestige champagnes. Whatever happens, rest assured that you'll never be able to open your champagne too early, as the Champagne Houses only release their cuvées when they have reached perfect ripeness and are ready for immediate consumption.

    A blend of 100% Grands Crus and Premiers Crus Chardonnays from the Côte des Blancs and Montagne de Reims regions. This first Vintage A/18 edition incorporates 6 complementary vintages selected from over 22 vintages received in the winery during the 2018 harvest.
    Vinification :
    Blended from 4 Côte des Blancs Grands Crus: Chouilly (Freshness and fruit), Cramant (Liveliness and amplitude), Le Mesnil-sur-Oger (Tension), Oger (Chalky minerality), as well as a Côte des Blancs Premier Cru: Cuis (Silky texture), a Montagne de Reims Premier Cru: Bisseuil (Depth).
    Micro-vinification by plot in small stainless steel vats
    6 years of ageing between harvest and marketing.
    Dosage :
    Extra Brut 5 g/L to better reflect the purity of the style. g/liter
