    Terroir : Kimmeridgian Jurassic limestone and marl, cool, sunny, semi-continental climate of southern Champagne, average altitude 250 m.

    Culture: Precision viticulture with HVE label since 2015, organic practices: extensive prophylaxis, no weedkillers, soil cultivation, partial grassing, organic composts, reduced frequency of treatments, no insecticides.

    Environment: Development of biodiversity by planting orchards, truffle oaks, melliferous fallows, late mowing of grassed areas (pollination), restoration of vernacular heritage (cadoles).
    To the eye

    A limpid, pale color with green and gold highlights.

    On the nose

    A fascinating nose of peach, pear, fresh quince, fig, apricot, plum, tangerine, floral complexity (acacia, honeysuckle), fresh almond, sweet spices.

    In the mouth

    Rich, powerful and salivating on the palate, with great mineral uprightness (chalk, granite).

    Ideal operating temperature

    Drink at 8-10°C and leave to open for 5 minutes in a glass, or decant.

    Assembly :
    Pinot Noir, Chardonnay, Meunier, Blanc Vrai (Pinot Blanc), Buret (Pinot Gris), Arbane and Petit Meslier.
    Vinification :

    Harvesting: Exclusively manual and progressive depending on grape maturity. Sorting in the vineyard. Immediate transfer to openwork crates.

    Grape varieties: Pinot Noir from a massal selection Domaine planted in 1974, Chardonnay, Meunier, Blanc Vrai (Pinot Blanc), Buret (Pinot Gris), Arbane and Petit Meslier planted on the same plot, various Chablis prunings, Cordon de Royat and Guyot simple.

    Vinification: Slow pneumatic pressing, elimination of pruning, separate vinification for each grape variety, static settling, simple yeasting, natural malolactic, light sulfiting, loose filtration after chilling.

    Aging: 36 months on lees, disgorged without dosage to preserve the wine’s purity.
