    Food & champagne pairings

    Brut Nature requires constant attention to express the essential. This know-how, echoing that of gastronomy, makes this cuvée a great champagne for the table and connoisseurs. Ideal with iodized dishes, oysters, raw fish and shellfish, sea urchins and caviar. Also with Thai cuisine, sushi, maki and sashimi.

    Ideal operating temperature

    To appreciate all its finesse and aromas, champagne should be enjoyed chilled (but not iced). Depending on the cuvée, the ideal serving temperature is between 8 and 12°C.

    Potential of keeping

    Like all wines, champagne can be kept for varying lengths of time, depending on the type. Under optimal storage conditions, champagne can be kept for 1 to 2 years for Brut cuvées, and up to 4/5 years or even longer for vintage and prestige champagnes. Whatever happens, rest assured that you'll never be able to open your champagne too early, as the Champagne Houses only release their cuvées when they have reached perfect ripeness and are ready for immediate consumption.

    Assembly :
    The emblematic grape variety of Champagne Ayala, Chardonnay makes up the majority of the Brut Nature blend (55%). With its freshness and elegance, it is the very essence of pure Ayala style. Pinot Noir (30%) and Meunier (15%) enhance the Chardonnay, bringing depth and roundness to the blend.

    70 crus make up the Ayala Brut Majeur cuvée. A selection of Champagne’s finest terroirs: Montagne de Reims, Côte des Blancs, Les Riceys, Montgueux and Vitry le François. This great diversity, one of the House’s hallmarks, contributes complexity and balance to the blends.

    Wines from the 2019 harvest guarantee freshness and tension for the Brut Majeur cuvée.

    Ayala Brut Majeur is also made up of reserve wines (43% of the 2018, 2017 and 2016 harvests). A true memory of previous vintages, they work in synergy. They provide a silky texture on the palate and contribute to the balance of this House signature cuvée.
    Vinification :
    Unadulterated vinification in stainless steel vats creates a wine of remarkable precision and purity. During this process, which has all the hallmarks of a return to the roots, the hand of man is replaced by the raw material, to reveal the purest expression of the grape. Chardonnay, 55% of the blend, contributes to the freshness and purity of Brut Nature.

    After nearly 4 years of extended cellar ageing, Brut Nature reveals elegant complexity. Time compensates for the absence of dosage, revealing the exceptional quality of grapes from the best Champagne crus.
