    The 2008 vintage: Dom Pérignon Rosé Vintage 2008 is part of a sunny decade. In the midst of this, the Vintage stands out: gray and cloudy, spring and summer are marked by a lack of heat and light. When – as in 2000, 2006 or the emblematic 1996 vintage – the September sun and wind turn the situation around. Then, beyond all expectations, the long-awaited maturity takes hold and blossoms in an unprecedented, high-pitched equilibrium.
    To the eye

    A deep, captivating color.

    On the nose

    The bouquet opens instantly on raspberry and wild strawberry. Powdery notes of iris and violet quickly mingle with the fruit and take hold. On breathing, we finally see the emergence of greener nuances, closer to privet, angelica and camphor leaf.

    In the mouth

    The first sensations are tactile, fleshy, silky. They gradually unfold, then become firmer. The acidic framework, signature of the Vintage, wraps itself around the Pinot structure to reveal the heart of the wine. The finish asserts itself and persists in a perfume of peony and white pepper.

    Food & champagne pairings

    Dom Pérignon Rosé Vintage 2008 was born to push back the boundaries of creation, savoir-faire and gastronomic experience. Chefs Alain Ducasse and Albert Arià have come up with an ideal pairing of cauliflower lightly coated with mole, inspired by Mexican cuisine with its preparation based on cocoa, roasted herbs and spices. This gives it a spicy, concentrated and rich dimension that matches the wine perfectly for its depth, structure and full-bodied ingredients.

    Ideal operating temperature

    To appreciate all its finesse and aromas, champagne should be enjoyed chilled (but not iced). Depending on the cuvée, the ideal serving temperature is between 8 and 12°C.

    Potential of keeping

    Like all wines, champagne can be kept for varying lengths of time, depending on the type. Under optimal storage conditions, champagne can be kept for 1 to 2 years for Brut cuvées, and up to 4/5 years or even longer for vintage and prestige champagnes. Whatever happens, rest assured that you'll never be able to open your champagne too early, as the Champagne Houses only release their cuvées when they have reached perfect ripeness and are ready for immediate consumption.

    A radical blend: this fruit declaimed loud and clear, this remarkably intense aromatic persistence, this total coherence opens up all possible fields. Breaking free from the Champagne canons, reinterpreting conventions, Dom Pérignon reveals the 2008 vintage through a bold blend of Pinot Noirs from the “Chants de Linottes” plot in Hautvillers and the “Vauzelles” plot in Aÿ. Their fruitiness and structure bring out the precision and natural brilliance of the wines with even more flesh and gravity. Harmony, the founding quest of Dom Pérignon, is built here on contrasts and oppositions sometimes bordering on contradiction.
