    Vintage 2009: At the start of 2009, winter was particularly harsh. Champagne is experiencing snowy spells and temperatures remain very low. A mild, rainy spring is not conducive to flowering, and mildew threatens. In summer, despite some stormy spells which raised fears of a deterioration in health, the sun was out in force, particularly in August. For five consecutive weeks, the weather remained hot, dry and very sunny. On September 4, a hail storm hit the vineyards of Hautvillers, Verzenay and Chouilly. But the following day, the return of summer weather allowed the grapes to complete their ripening in complete serenity. Picking began on September 12 under ideal conditions. The sanitary quality of the grapes is exceptional, and their ripeness, underlined by beautiful aromas, is superlative.
    To the eye

    The color is deep and captivating.

    On the nose

    Rose, orange essence and saffron exhale in furtive touches. The bouquet then becomes warmer, with red fruit dominating - raspberry and cherry - then turning dark - blackcurrant and fig. In the end, sweetness prevails on notes of gingerbread and licorice.

    In the mouth

    The fruit is majestic, ripe, fleshy and deep. After a round attack, the wine settles in the middle of the palate. He settles into a form of intimacy, intense and caressing. Power is contained; coherence dominates. Sensations converge and persist, sapid, leaving the memory of their tactile imprint.

    Ideal operating temperature

    To appreciate all its finesse and aromas, champagne should be enjoyed chilled (but not iced). Depending on the cuvée, the ideal serving temperature is between 8 and 12°C.

    Potential of keeping

    Like all wines, champagne can be kept for varying lengths of time, depending on the type. Under optimal storage conditions, champagne can be kept for 1 to 2 years for Brut cuvées, and up to 4/5 years or even longer for vintage and prestige champagnes. Whatever happens, rest assured that you'll never be able to open your champagne too early, as the Champagne Houses only release their cuvées when they have reached perfect ripeness and are ready for immediate consumption.

    A radical blend: The fruit asserted itself with remarkably intense aromatic persistence and a composite consistency that opened up an exciting array of possibilities. Dom Pérignon reveals the 2008 vintage through a daring blend built on the Pinot Noirs of the “Chants de Linottes” plot in Hautvillers and the “Vauzelles” plot in Aÿ whose fruit and structure balance the tension between the precision and natural radiance of the wines. The constant quest of Harmony that defines Dom Perignon is built here on contrasts and oppositions that sometimes border on contradiction.
