    The 2008 vintage: A year of slow construction forged by a late ripening of the berries and a crescendo of aromatic profiles, 2008 promises to have exceptional potential. It is the coldest year of the decade, and without doubt the most successful. The grapes, perfectly healthy, have delivered subtle aromas, with a fresh tone, a bright fruit that blossoms with time and finds in the wines the measure of their bloom. This vintage is straightforward, balanced and built for the future. It is a vintage of patience and expectation, distinguished and refined. To date, the wines are still in their youthful expression, delivering notes of dried flowers, with a caressing touch of bubbles, a straight and elegantly structured substance.
    To the eye

    A slightly coppery shade, deep, sensual, bewitching.

    On the nose

    Notes of kirsch cherry, greedy, pastry-like.

    In the mouth

    Explosive palate with fresh, lemony, prominent fruit. A refreshing champagne built around a taut, subtly spicy, airy frame, which retains the structure provided by the Pinot Noir. The finish is fine and racy, with notes of peony and great aromatic depth.

    To appreciate all its finesse and aromas, champagne should be enjoyed chilled (but not iced). Depending on the cuvée, the ideal serving temperature is between 8 and 12°C.

    A rosé de saignée, 100% Pinot Noir, a combination of the Grands Crus of Bouzy, delicately spiced, and the intense fruitiness of Riceys.
    Vinification :
    A rest in the cellar of almost ten years. Dosage: The Cellar Master’s approach is to adapt the dosage level to each cuvée in order to sublimate its flavours and aromas and thus guarantee its unique style.
