    The Diamant spirit: Starting with the vines, then finding the right balance between Pinot Noir and Chardonnay, finding the right blend, the one that’s like no other, the one that defines the spirit of the wine, its character, the one that’s recognized in the four corners of the world, and last but not least, the one to which we’re attached and which, year after year, shouldn’t change.     To the eye

    The color is a pale white-gold hue, with particularly fine bubbles and a delicate, persistent cordon de mousse.

    On the nose

    The nose is fine, charming and subtle, with aromas of white flowers and citrus fruit. The second nose evolves on toasted notes, scents of dried fruit, fresh almonds and hazelnuts.

    In the mouth

    The tension is invigorating, supported by a distinctive minerality and lemony notes. A champagne with great length on the palate.

    Food & champagne pairings

    Its beautiful maturity and pleasant freshness make it the ideal champagne for a festive aperitif. It is also very popular with scallop carpaccio, seafood cassolette, lobster and Asian fish dishes.

    Ideal operating temperature

    To appreciate all its finesse and aromas, champagne should be enjoyed chilled (but not iced). Depending on the cuvée, the ideal serving temperature is between 8 and 12°C.

    Potential of keeping

    Like all wines, champagne can be kept for varying lengths of time, depending on the type. Under optimal storage conditions, champagne can be kept for 1 to 2 years for Brut cuvées, and up to 4/5 years or even longer for vintage and prestige champagnes. Whatever happens, rest assured that you'll never be able to open your champagne too early, as the Champagne Houses only release their cuvées when they have reached perfect ripeness and are ready for immediate consumption.
