Drappier Carte d’Or Coffret Immersion 2 bouteilles invites you to a comparative tasting of two Carte d’Or cuvées matured in two very different ways: one in the Cistercian cellars of the Drappier family in Urville, the other in the depths of the Breton waters of the Côtes d’Armor.
The Immersion experience: Until their third year of life, the two bottles share the same path: harvest mainly from 2017, reserve wines from 2016 and 2015, bottling in April 2018. Then one of the two bottles of Carte d’Or was immersed in the English Channel at a place called
Ar Pommellou
a marine concession belonging to the Drappier family. This maritime terroir is defined by a low thermal amplitude (between 8 and 13 degrees) and a depth of 31 meters. Deposited on the seabed on October 4, 2020, its experience under the sea lasted 646 days. A slower ageing process can be observed, linked to a lower oxygen content in the water than in the air. Champagne evolves in a neutral environment, the pressure in the bottle being balanced by the pressure at this depth (4bars).

The yellow and gold label, created in 1952, is the distinctive sign of a rich and greedy cuvée, all in freshness. The Carte d’Or vintage expresses all the aromas of the famous black grape with white juice. It is sought after not only for its structure but also for its characteristic fine notes of red fruits with spicy undertones.
The robe of Champagne Drappier Carte d'Or is reflected in rich golds, sometimes coppery. No winemaking technique is used to modify the natural color of the Cuvée.
On the nose
The bouquet of rosehip flowers quickly gives way to stone fruit aromas such as white peach from the vineyards. A spicy touch announces a powerful and complex mouth.
In the mouth
The whole is immediately vinous, dominated by ripe fruits: peach, apricot and red fruits. The natural freshness is barely dressed with a discreet dosage that ensures a long finish. As it matures, Carte d'Or will surprise you with notes of gingerbread, candied fruit and pastries.
Ideal as an aperitif or to accompany fish and white meats.
Serve at 7°C.
Like all wines, champagne can be kept for varying lengths of time, depending on the type. Under optimal storage conditions, champagne can be kept for 1 to 2 years for Brut cuvées, and up to 4/5 years or even longer for vintage and prestige champagnes. Whatever happens, rest assured that you'll never be able to open your champagne too early, as the Champagne Houses only release their cuvées when they have reached perfect ripeness and are ready for immediate consumption.
