Clarevallis is an expression of the landscape and land that man has nurtured since the 12th century.

    Cuvée Clarevallis takes its name from the Latin name of the Clairvaux Abbey built by Saint Bernard, in honor of whom it was created. He introduced Pinot Noir to the region, vinifying and ageing wines in the Abbey’s cellars. The same cellars that today belong to the Drappier Champagne House.

    Drappier’s 100-hectare vineyard is the essential asset of the Champagne House’s cuvées. Since 1808, the family has selected particularly well-exposed, extremely chalky parcels, mostly located around Urville, where the majority Pinot Noir grape variety finds its finest expression, producing highly elegant, aromatic wines.
    To the eye

    A white-gold colour, with a very fine, persistent mousse.

    On the nose

    Notes of elderberry and violet. Chalky minerality rounded out by Pinot pulp.

    In the mouth

    Tension on the palate, balanced by a discreet dosage of pretty bitters.

    Food & champagne pairings

    Ideal as an aperitif or with marinated fish, such as sea bream and grapefruit ceviche. Delicious with a fresh summer salad, langoustine and crisp vegetables. Perfect with veal blanquette, risotto, chicken fricassee or sole a la plancha.

    To be consumed at 7 °C.

    Potential of keeping

    Like all wines, champagne can be kept for varying lengths of time, depending on the type. Under optimal storage conditions, champagne can be kept for 1 to 2 years for Brut cuvées, and up to 4/5 years or even longer for vintage and prestige champagnes. Whatever happens, rest assured that you'll never be able to open your champagne too early, as the Champagne Houses only release their cuvées when they have reached perfect ripeness and are ready for immediate consumption.

    75% Pinot Noir, 10% Meunier, 10% Chardonnay, Blanc Vrai 5%.

    Urville Jurassic Kimmeridgian limestone soil.
    Organic vineyard, partly ploughed by a horse.
    First press.
    Gravity vinification.
    Natural settling.
    Malolactic fermentation.
    Estate-grown organic yeasts.
    Unfiltered and undiscolored.
    Extremely low sulfite content (20 mg/l).
    Dosage :
    Cuvée Clarevallis is blended with Extra Brut at 4 g/liter
