The year 2016 was characterized by a particularly pronounced climatic swing: after a cool, wet, rather late spring, the summer was dry and hot, marked by a heatwave at the end of August and a dry, sunny harvest period that ensured the grapes ripened beautifully. These dry and bright conditions benefited the Pinot Noir grapes, which ripened to an intense fruity character and a silky texture. The Chardonnays are not to be outdone, with a more classic, chiseled and saline look.
The color is a bright, brilliant yellow. The effervescence is magnificent, slow and fine.
On the nose
The bouquet is intense, deep and precise, blending fragrances of white flowers (acacia), concentrated roasted citrus (lemons) and ripe yellow fruit (peach, mirabelle plum). After a few minutes, discreetly iodized, powdery and roasted nuances testify to the autolysis of the yeasts during maturation "sur lattes".
In the mouth
On the palate, the impression is "immediate", soft and delicate, more accessible than ever! Ripe, concentrated, juicy fruit sabayon, the signature of the great heatwave Pinot Noirs of 2016, with their soft, caressing texture, grown on chalk soil. The effervescence is tactile, perfectly integrated and almost salty. Notes of harvest and oyster shell are the hallmarks of great Chardonnays that ripen slowly and late. The substance is there, powdery, grainy and deliciously chocolaty. We're very close to the "ideal" balance, at once crisp, saline and iodized, with a long, chalky, crystalline finish that stretches to a "crescendo". The sensation is refined, sapid and pure... like the infinite grace of an opera ballerina. Cristal 2016 is pure, both fine and concentrated. It is the perfect, obvious grand Cristal: 50% solar (ripe, juicy Pinots Noirs) and 50% soil (chalky, saline Chardonnays). It comes close to 2002, 2008 and 2012, but with an even more stretched, precise and concentrated allure.
To appreciate all its finesse and aromas, champagne should be enjoyed chilled (but not iced). Depending on the cuvée, the ideal serving temperature is between 8 and 12°C.
Like all wines, champagne can be kept for varying lengths of time, depending on the type. Under optimal storage conditions, champagne can be kept for 1 to 2 years for Brut cuvées, and up to 4/5 years or even longer for vintage and prestige champagnes. Whatever happens, rest assured that you'll never be able to open your champagne too early, as the Champagne Houses only release their cuvées when they have reached perfect ripeness and are ready for immediate consumption.
