    The 2012 vintage :After numerous climatic incidents (winter and spring frosts, intense rain in June and July, then a heat wave in August), the harvest was small in quantity but very healthy. The ripeness of the different grape varieties is characteristic, with potential degrees close to 2002 and relatively high acidities, above the ten-year average: the wines obtained are full of character, a guarantee of good potential, with concentrated fruitiness combined with a sustained freshness.

    The bubble is nervous and expresses itself on a brilliant light gold background.

    The nose is zesty, mixing pastry and fruity notes.

    In the mouth

    The refreshing fullness and precision of flavour on the palate offer a finish of particular aromatic persistence.

    Food & champagne pairings

    While naturally imposing itself at the gourmet moment of the aperitif, the Vintage 2012 likes to make its amplitude resound at the table: the let of Saint-Pierre or the sushi of gambas and scallops will find a surprising place at its side. For the more daring, the Chaource aumonière or monkfish cheeks in lemon confit will be very surprising.

    Ideal operating temperature

    Serve between 7 and 9 °C.

    Potential of keeping

    Like all wines, champagne can be kept for varying lengths of time, depending on the type. Under optimal storage conditions, champagne can be kept for 1 to 2 years for Brut cuvées, and up to 4/5 years or even longer for vintage and prestige champagnes. Whatever happens, rest assured that you'll never be able to open your champagne too early, as the Champagne Houses only release their cuvées when they have reached perfect ripeness and are ready for immediate consumption.
