A pioneer in the development of 100% Chardonnay blends, Charles Heidsieck very early on showed an interest in this still marginal champagne range at the time. Charles Heidsieck Blanc des Millénaires Millésime 2007 is : An incredible texture. Maturity, vivacity and ageing potential give this wine its essential aromatic complexity. The ultimate expression of time. Nearly 15 years of ageing, including 10 years on the lees in thousand-year-old chalk houses, from which the wine takes its name. The exclusive production of great Chardonnays. 4 Grands Crus and 1 Premier Cru of the Côte des Blancs, selected for their ability to evolve and express their richness while maturing: Oger, Mesnil-sur-Oger, Avize, Cramant, Vertus.

To the eye

A pale gold colour with light green reflections, typical of the Chardonnay grape variety and contrasting with the previous vintage.

On the nose

The chalky minerality of the Côte des Blancs is all around. There are notes of toast and smoke. When shaken, fresh citrus notes appear - grapefruit, yuzu, quince - giving a nice vivacity to this fine nose, blended with creamy nuances and a subtle touch of salted butter caramel.

In the mouth

After the tension, the wrapping texture appears with accents of lemon meringue pie and saline notes. The generosity is there and will continue to develop with time. A silky, dynamic and perfectly structured sensation with a long and round finish.

Food & champagne pairings

The very nature of this vintage makes it ideal for tasting as an aperitif or at the beginning of a meal. The sea is its favourite territory, but it will also go perfectly with certain cheeses. Charles Heidsieck Blanc des Millénaires 2007 is ideally paired with the flavours of the sea: flying fish roe, sea urchin coral, smoked eel, generous oysters, abalone. It goes well with: seaweed, coriander, lemongrass, shiso, lemon balm, peppermint. Cheeses: mozzarella, scarmozza, Pecorino di Pienza.

Ideal operating temperature

To appreciate all its finesse and aromas, champagne should be enjoyed chilled (but not iced). Depending on the cuvée, the ideal serving temperature is between 8 and 12°C.
