Champagne Saint-Sauveur Blanc de Blancs Vintage 2017 has undergone six years of aging on lees. After a rigorous selection of Vertus and Oger grapes from the 2017 harvest, this Vintage achieves a very fine balance on the palate, between greedy citrus fruit, a light vanilla base, and a lovely toasty character.

    Terroir : Kimmeridgian Jurassic limestone and marl, cool, sunny semi-continental climate in southern Champagne, average altitude 250 m.

    Grape varieties: Blanc Vrai (Pinot Blanc) in short cordon de Royat pruning, half of which is blended with Chardonnay in Chablis pruning, yields 20% below the Champagne average.

    Culture: Precision viticulture with HVE label since 2015, organic practices: extensive prophylaxis, no weedkillers, tillage, partial grassing, organic composts, reduced frequency of treatments, no insecticides.

    Environment: Development of biodiversity by planting orchards, truffle oaks, melliferous fallows, late mowing of grassed areas (pollination), restoration of vernacular heritage (cadoles).
    To the eye

    Very pale gold in color, with silvery highlights.


    On the nose

    A subtle nose of white flowers with hints of butter. Beautifully balanced on the palate, with greedy citrus fruit, a light vanilla base and a lovely toasty character.

    In the mouth

    The palate is airy, with melted acidity giving the whole a great finesse.

    Food & champagne pairings

    Enjoy throughout a meal with fish, meats or cheeses to play with its structure.

    Ideal operating temperature

    Drink between 8 and 10°C.

    Potential of keeping

    Drink fresh within 3 years, or more complex up to 10 years.

    Assembly :
    100% Chardonnay.
    Vinification :
    Cuvée, 7 months on lees, 18% in foudre, the rest in vats, then aged for 6 years in the cellar.

    Blend: 100% Chardonnay from Vertus and Oger.

    6 g/liter
