The year 2009: Nature offered us an ideal summer, hot, dry and very sunny. Everything was in place to harvest great grapes. The bunches were in an exceptional sanitary state, without any alteration. The juices from this harvest had a natural balance close to perfection.
Pale gold color with delicate golden nuances, signs of elegance and maturity. Exceptional shine. Effervescence of great finesse.
On the nose
The first nose is remarkably elegant, discreet and very fresh. The first notes are floral and sweet, reminiscent of honeysuckle and acacia flower. As it opens, the wine reveals fruitier nuances of dried fig but also of frangipane. The Pinot Noir asserts itself after a few seconds with aromas of violet and blueberry.
In the mouth
The structure of the wine, velvety, reminds the chalk of Champagne. Very straight and with an exceptional minerality. The balance is perfect. Notes of lime blossom and slivered almonds intermingle with the fig aromas detected on the nose. A sign of great maturity after more than twelve years of cellar aging, nuances of toast bring complexity to this vintage. The finish is in perfect balance between tension and greed through a dash of pink grapefruit.
A gastronomic wine par excellence, it is the ideal partner for many dishes. With its structure and natural freshness, it will magnify rich dishes such as foie gras or white meat in sauce. At the end of the meal, it will be perfectly associated with a Comté cheese of 18 months of maturing.
To appreciate all its finesse and aromas, champagne should be enjoyed chilled (but not iced). Depending on the cuvée, the ideal serving temperature is between 8 and 12°C.
Like all wines, champagne can be kept for varying lengths of time, depending on the type. Under optimal storage conditions, champagne can be kept for 1 to 2 years for Brut cuvées, and up to 4/5 years or even longer for vintage and prestige champagnes. Whatever happens, rest assured that you'll never be able to open your champagne too early, as the Champagne Houses only release their cuvées when they have reached perfect ripeness and are ready for immediate consumption.
Chardonnay, Pinot Noir.
