    and scald is rife in all sectors, reducing the weight of bunches. The Meuniers and Pinots Noirs are ripening early, while the Chardonnays are about ten days behind. The harvest
    start on average on September 18, under mild weather conditions.
    To the eye

    The color is golden with slight yellow-orange highlights.

    On the nose

    The first nose is fruity, with notes of exotic fruit, passion fruit and fleshy yellow fruit. The second nose brings biscuity, cereal and dried fruit notes. A saline mineral touch completes the aromatic palette.

    Food & champagne pairings

    This well-balanced, fresh wine is a perfect match for a wide variety of dishes:
    - Guinea fowl supreme, passion fruit, tarragon, quinoa and Sichuan pepper.
    - Blanquette of monkfish cheeks, orange zest, cauliflower and Vadouvan.
    - Provençal pie with summer vegetables and parmesan.

    Ideal operating temperature

    To appreciate all its finesse and aromas, champagne should be enjoyed chilled (but not iced). Depending on the cuvée, the ideal serving temperature is between 8 and 12°C.

    Potential of keeping

    Like all great Ruinart Vintage champagnes, a few more years in the cellar will allow it to gain in complexity and intensity. Optimum storage conditions for Ruinart R Vintage 2016: away from light (artificial and natural) and at a constant temperature, between 10 and 15°C.

    Assembly :
    48% Chardonnay, 32% Pinot Noir, 20% Meunier. 100% Grands Crus and Premiers Crus from the Côte des Blancs and Montagne de Reims.
    Vinification :
    – Manual harvesting.
    – Alcoholic fermentation in temperature-controlled stainless steel vats.
    – Malolactic fermentation.
    – Ageing on slats: 6 years.
    Dosage :
    5 g/liter
